This very limited production wine is the culmination of elegant Napa Valley fruit integrated with the best barrels from France. An inviting nose of ripe dark cherries, toasted oak, vanilla and spice leads to the familiar qualities that have showcased this wonderful wine. A bright graceful, balanced, mid palate leads seamlessly into a long fruit filled finish.
The 2009 Three D Cabernet Sauvignon is a reflection of the very best of what we do at Salvestrin. Our best Cabernet Sauvignon lots matched with the finest French oak barrels and aged for an extended period allows the wine to concentrate and soften into a beautiful expression of our site. Ripe dark cherries and blackberry, toasted oak, vanilla and spice are the showcase of this delicious wine. A full mouth coating mid palate builds to a focused lasting fruit filled finish.
Our prized 3D Cabernet spends almost three years aging in new French oak barrels. This prolonged aging process allows the wine to become harmonious and seamless in texture. Fine grain tannins provide ample structure, and the core of currants, blackberry, plum and black olive shine through. Layered and complex, hints of spearmint, licorice, and a slight barrel toastiness can also be discovered.
Black cherry and blackberry are the first aromatics to shine through on this elegant Cabernet. Full bodied and rich, the tannins are firm yet refined, commanding a robust plush quality. Hints of barrel spices reveal a slight toastiness, which is complemented by cigar box, leather, and plum on the back end.
Our Three D is a unique selection of our finest Cabernet barrels of the vintage. Meticulously layered, aromas of plum, brambly fruit, fresh tobacco leaf, and a hint of clove are featured. The palate boasts fine grained, chalky tannins that surround a silky voluptuous middle. Seamless and mouth-coating, wild raspberry and black olive reveal themselves on the back end of the lingering finish. Completely unadulterated, this Cab was bottled unfined and unfiltered.
Our flagship Cabernet opens up with notes of blackberry, black cherry, licorice, and espresso bean. This full bodied wine has a powerfully structured periphery showcasing refined tannins that frame a dense juicy core. Robust and elegant at once, this wine embodies the delicate balance of finesse and opulence. As it opens, spearmint and dark chocolate appear. Very lightly fined and bottled unfiltered, this Cabernet is a true expression of our Dr. Crane Vineyard site.
Our flagship Cabernet opens with notes of black cherry, dried tobacco, pencil shavings, and thyme. Medium plus in weight, the core is velvety in texture and framed by powdery refined tannins. Dried sage and blood orange shine through on the finish, which has notable persistence. Driven by finesse with a hint of minerality, this expression of the Dr. Crane Vineyard site is unadulterated, unfined, and unfiltered.
